A quick recipe

Coconut and Chia Seed Pudding

  • 4 tablespoons of chia seeds

  • 1 can of light coconut milk

  • 1 teaspoon of maca (optional)

  • Blueberries to taste (optional, you could use blackberries, raspberries, bananas or no fruits)

  • a touch of vanilla and honey or maple syrup (optional, you could use nothing or add cacao for a chocolate variation) 

    Place all ingredients, aside from the fruits, in a bowl and give it a little stir so it gets blended or place all ingredients in a blender and blend for 20 seconds or until smooth. Both options are good. If you don't like the texture of chia seeds then blending is best. Transfer the mixture to three little jars and place in the refrigerator for a least four hours! You can add the fruits, nuts or granola when ready to serve. 

    A little about the ingredients
     

  • Chia seeds are a great source of fiber,protein, omega 3, magnesium, calcium, and antioxidants.

  • Coconut milk provides a good source of fat (MCT), proteins and vitamins. It  helps improve digestion, reduce inflammation and manage blood sugars.

  • Maca a rich source of B vitamins as well as Vitamins C and E ad it's known for its ability to increase energy and endurance.

    Not a bad breakfast.
