Spicy Bliss: My New Favourite Soup

I am addicted! Seriously, I eat this soup twice a week. It's so good! If you know me, you know that I don't like following recipes so for me to take the time to count and measure, well... let's just say it's because I care!
Spicy Bliss Soup
Ingredients
3 medium sized potatoes thinly sliced
9 celery sticks chopped
25 small shiitake mushrooms sliced (I shred them by hand)
1 tbsp coconut oil
1 can (light or full fat) coconut milk
3 tbsp cumin
1 jalepeños pepper and 2 serrano peppers (optional or you can reduce the number of peppers. Mine is so spicy I sweat a little when I eat it. These three peppers are added to only half the soup. But as mentionned it's up to you. )
1 can green peas
Blue hot corn chips
Cilantro (optional)
Salt and pepper to taste
Preparation
In a large pot add coconut oil, potatoes, celery and shiitake mushrooms. Sauté on low heat for 7 to 8 minutes or until potatoes soften. Add coconut milk and water (fill up the can with water twice), add cumin. Bring to a boil and let simmer for 10 to 15 minutes. Place all ingredients in the blender adding the hot peppers if you choose and blend until smooth. Place soup back in the pot and add green peas. When serving add crunched up blue hot corn chips, salt and peper to taste and a little cilantro.
This will give you 4 bowls of soup.
